Sweet Potato Casserole Recipe

This casserole is a delicious side dish for any family meal or fall/winter holiday (like American Thanksgiving). It's sweet, light, and fluffy and simple to prepare. It can be made healthier by cutting out the sugar. Also, the filling is loved by adults and toddlers alike!

INGREDIENTS Filling

  • 3-4 roasted sweet potatoes

  • 1/4 cup raw sugar (optional)

  • 2 eggs, beaten

  • 1/2 teaspoon salt

  • 4 tablespoons butter (melted if the potatoes are cool)

  • 1/2 cup almond/coconut milk

  • 1/2 teaspoon vanilla extract

Topping

  • 1/4 cup raw sugar

  • 1/3 cup gluten-free flour

  • 3 tablespoons soft butter

  • 1/2 cup chopped pecans/walnuts

DIRECTIONS Filling

  1. Whip together sweet potatoes, sugar, eggs, salt, butter, almond milk and vanilla extract in a large bowl. Mix until smooth.

  2. Transfer to a 9" X 13" baking dish.

Topping

  1. Mix up the sugar and flour in a bowl.

  2. Mix in the butter until the mixture is coarse and stir in the pecans.

  3. Sprinkle on top of the filling.

  4. Bake in oven at 350 F for 25-30 min.

  5. Serve and enjoy!
